Grenache cheese factory
La Garnacha is a community and natural reserve, which has a core area of 22 thousand hectares. Inside it there is a cheese factory, the "zopilote" stone handicraft workshop, an earthworm farm, a shelter, a seedbed of medicinal plants, a goat farm, a ranch where they sell natural refreshments and coffee harvested in the area, and a store where all these products are sold. It also has a viewpoint to the Apaguajil Hill, the Cave of the Goblins and an impressive view of the Pacific of Nicaragua.
The Garnacha is located approximately 15 kilometers from the city of Estelí and 145 kilometers from Managua, at 1,400 meters above sea level. It is part of the Tisey Estanzuela reserve, but it is within the buffer zone of it. The inhabitants of the La Garnacha community are the ones who administer the reserve and take care of the tours; they also work with their own hands all the products that are offered there. As a cooperative, they are under the name of Asociación Agrícola San Nicolás. When arriving at Garnacha, the first attraction is the Cheese Factory. Swiss cheese is processed here, based on cow's milk and goat's milk. The factory has its own hygienic process. In a room, the milk is processed, then the cheese is stored in a cellar where water is poured on the floor to maintain humidity. The necessary temperature should be between 17 and 22 degrees Celsius.
The cheeses are aged from 3 to 6 months, to offer them as Swiss; and from 8 months onwards to achieve the completion of Parmesan. The pound of cow's cheese has a value of C $ 100 and of the goat C $ 140. The room where they are stored must be kept closed and no type of contamination should enter. Visitors can access this cellar accompanied by a guide.
If you travel by private vehicle from Managua, you have to take the Pan-American Highway North towards Estelí. At kilometer 135 turn left towards San Nicolás and continue for 9 kilometers, there you will see a sign for Rancho Don Luis, you have to turn right towards the community La Tejera. Once in that direction, continue until the junction La Garnacha, which is labeled, then turn left and continue 1.5 kilometers without turning until you reach the tourist office, located next to the Cheese factory.
